Plants We Used To Use 238. Japanese knotweed

In the UK, Japanese knotweed (Fallopia japonica) is a highly problematic invasive species. It's, however, edible, with a taste like lemony rhubarb. This plant also features in sweet and savoury recipes, including fruit compotes; ice cream; jams; purees; sauces; soups; wines and gin. Perhaps we should eat it, to control it?
