Where's the Beef?

 


Industry 'experts' are claiming that the 'use-by dates' on red meat should be extended (https://www.theguardian.com/world/2020/aug/09/shelf-life-of-21-days-or-more-could-save-red-meat-waste-say-uk-industry-bodies). They claim that the current 10 day limit on vacuum or 'gas-packaged' meat kept between 3 and 8०C, could be safely extended to 21 days or even longer (depending on whether the meat is beef, lamb or pork). I do worry about the assumption that the meat is fine to eat before it became 'toxic'. I know that, on health grounds (both personal and for the planet), we are being encouraged to eat less red meat but the current rate of wastage is scandalous. A waste charity calculates that 240k tonnes of beef, pork and chicken is thrown away annually in the UK.
