Not Mushroom Inside?

Mushrooms are the prominent sexual propagation structures used by Fungi. Fungi are the most diverse and frequently-encountered organisms on our planet. Most Brits have only, however, eaten button mushrooms. This is often after frying them to death. Tim Dowling points out that much more interesting and subtle edible 'fungal fancies' can now be purchased in the UK from specialist growers and foragers. Dowling details the different species and illustrates how they can be used in cooking (https://www.theguardian.com/food/2023/feb/21/the-world-is-your-oyster-mushroom-the-expert-guide-to-cooking-delicious-fungi). It would be a good move to get Brits to appreciate a much wider range of edible mushrooms. They are generally a healthy dietary option. Dowling's best bit of advice is never to wash fungi. They quickly absorb water, sometimes rendering them relatively bland. Dowling advocates using a (clean but dry) toothbrush to remove any dirt. Alternatively, you can simply cut away any soiled areas.
