Plants We Used To Use 72. Bistort

All parts of Bistort (Polygonum bistorta) are edible, cooked or raw. Its leaves were traditionally used in Northern England to make Ledge pudding. They were mixed with oatmeal; nettles, onion and seasoning to make patties, fried with bacon. This was an Easter 'treat'.
