Plants We Used to Use 488. Wild carrot

Wild carrot (Daucus carota) roots can be eaten, when young or roasted. If dried and ground, they yield a 'coffee'. The flower heads can be lightly battered and deep fried. This plant's seeds are also used as a stew flavouring. Herbally, Wild carrot has been employed to treat urinary problems; gout and prostatitis.
