This blog may help people explore some of the 'hidden' issues involved in certain media treatments of environmental and scientific issues. Using personal digital images, it's also intended to emphasise seasonal (and other) changes in natural history of the Swansea (South Wales) area. Plants We Used to Use 8. Lesser burdock
The roots of Lesser burdock are cooked in some Asian dishes. The plant's leaves and stalks may also be incorporated in a wild salad (but watch out for phyto-oestrogens). However, burdock's best known UK use, is its role as flavouring for the Dandelion and burdock fizzy drink. The roots of both plants are combined in an infusion to provide a basic ingredient.
